Quick Vegan Snacks
In an ideal world, we would all be super prepared and never have to make a dash to grab any last minute snacks. But realistically, we all know there can be those days where we need something to tide us over until our next meal, or maybe just a snack to grab “just in case”. So I’m sharing 5 quick and easy snack ideas that you can put together, even if you’re in a rush.
Hummus with Veggies (…or crackers…or pitta!)
Whether store bought or homemade, I find it convenient to have a tub or two of hummus stocked in my fridge. I can always find something to go with it- whether it’s cucumber and carrot sticks, pitta or other breads, or just good ol’ crackers. It’s also a good way to add some healthy fats to your diet, which is always a plus!
Apples and Nut Butter
It’s a classic, but apple and peanut butter (or even almond butter), makes a great satiating snack. The crunch of a sweet apple, paired with smooth or crunchy nut butter, is delicious to both kids and adults alike. Of course, if you have a nut allergy, you can substitute nut butters with seed butters, such as pumpkin, sunflower, or tahini made from sesame.
Speaking of nuts and seeds, having the basics of a trail mix at home is always handy. I like to buy raw unsalted nuts (like peanuts, almonds, cashews) and then roast them in the oven. You can then add flavourings, such as cayenne, paprika, a pinch of salt, or a drizzle of maple. You don’t have to go all-out with an elaborate trail mix, and even a handful of different nuts can make a satisfying protein-packed snack. Additions like dried fruit and coconut chips are always tasty, though.
I’m guilty of a sweet tooth, so energy balls work wonders for me. They’re also filling, so I don’t find myself looking for other things to pick at afterwards. They’re great to make at the weekend for the week ahead, and can even be frozen and kept for weeks. However, if you want to make them before a busy day, you can simply use a food processor to mix oats, dates, nuts, nut butter, syrup, coconut oil, and even cacao. This can take a bit more time though.
It might seem like I’m ending this post on a boring note, but I really think that fruit is a perfect thing to grab when you’re not sure what to eat! Bananas, apples, grapes, and pears are all easy to take with you last minute. If you have a bit more time, sliced mango, papaya, or melon is wonderful in the warmer months.
