The intense heat from scotch bonnet
is really nicely integrated with the smoke thanks to the good melding of other
ingredients such as the onion and garlic. On the finish there is a delightful
black pepperiness, which makes you want to dive in for more. Quite often,
sauces like this don’t have the flavours integrated correctly, but this sauce
gets it right.
