Lemon Short Bread
We had fun with children making these delicious ,crumbly shortbread biscuits. With a Hint of lemon . If you prefer not the have the lemon that’s fine too. This recipe is a quick easy recipe and the children can cut out their favourite shapes . My Favourite part is when the children get all stuck in cutting their shapes out and each one owning their cookies .

60g unsalted butter,
softened 30g caster
sugar ½ lemon,
finely grated zest
90g plain flour
1. In a large bowl, beat together the butter until soft then mix in the sugar and lemon zest until pale and creamy.
2. Sift in the flour and work to a smooth dough .
3. Roll the dough out to a £1 coin thickness and use a round cookie cutter to stamp out the biscuits.
Chill the uncooked biscuits in the fridge until firm. Pre-heat oven to fan 170C/ conventional 190C/ gas mark 5.
Sprinkle the shortbread lightly with a little extra caster sugar and bake for 10-15 minutes until a pale biscuit colour. Leave on a cooling rack to cool .
TIP** – When rubbing the flour and butter you can use your finger tips and rub against the bowl . When rolling out the cookie dough roll out very gently to prevent the cookie dough to crumble.
