Bubur ketan hitam
Bubur ketan hitam, bubur pulut hitam or bubur injun is an Indonesian sweet dessert made from black glutinous rice porridge with coconut milk and palm sugar or cane sugar. The black glutinous rice are boiled until soft, and sugar and coconut milk are added.
- 100 to 125 grams of black glutinous rice (you can get them from Oriental shop) – make sure to soak them overnight to cut the cooking time
100 grams of coconut sugar
- 2 pandan leaves
- A pinch of salt
- 1 liter of water
Bring water to the boil and add the washed rice. Leave it on very low heat and cook it for ± 1/2 hour or until the rice is soften. Add the knotted pandan leaves, sugar and salt.
Let the dish simmer for an extra 5 minutes. Serve it with heated coconut milk and seasoned with a pinch of salt.
